Wondernight – Imperial Stout
La bravura e la preparazione di Samuele Cesaroni, mastro birraio di Brasseria della Fonte, nel creare birra e in particolar modo le imperial stout è nota a tutto il mondo brassicolo italiano.
Se a questo aggiungiamo l’assaggio di una imperial stout che lo ha folgorato e per 4 anni l’ossessione di replicare una ricetta che si avvicinasse il più possibile a quella “Imperial Stout così elegante e complessa” il risultato non può che essere eccellente, ed ha un nome preciso: Wondernight, “Imperial Stout brassata nella primavera del 2020 con il metodo del doppio mash, ingenti dosi di sciroppo d’acero canadese ed una bollitura overnight”.
Ha maturato per 15 mesi in botti di Boubon e Rye Whiskey, passata quindi in acciaio per diverse settimane per l’arrotondamento finale.
Nera come la pece con una schiuma nemmeno accennata in mescita, riflette a 360 gradi gli aromi e il sapore che la lunga maturazione in botte le hanno donato: sciroppo d’acero, cioccolato fondente, nocciola.
I 12,3 gradi alcolici sono di tutto rispetto e collocano la Wondernight in quella categoria che amiamo definire “da meditazione e fine pasto.”“
